"I learned how to cook from my Grandmother Emma. I was the first grandchild, and every summer I got to go down and stay with her in Mississippi. I spent a lot of time in the kitchen watching and tasting, and once in a while I might get to put a cup of water into something, but she did everything else. All her recipes were in her head. She never measured anything; she just knew the right amounts. She loved to cook collards, but she also made biscuits and every kind of soul food you can think of, the same things I make now in the restaurant. She passed in 2001, but when I opened this place a couple of months ago, I named it after her: Ms. Emma's Southern Cooking [282 N. Cleveland]."
